Tuscan Lobster Sandwich on an Italian Sub

INGREDIENTS
8 oz. Lobster Classic, Chunk Style 1/4 cup celery, chopped 2 tbsp. red onion, chopped 1 tbsp. basil, chopped 3 tbsp. mayonnaise, extra heavy 2 tsp. lemon juice 1 1/2 tsp. scallion, shaved 3 tsp. sundried tomato, diced 2 - 6 inch Italian sub bread leaf lettuce as needed |
DIRECTIONS
Mix all these ingredients into a bowl and season with salt and pepper. Split the Italian bread 3/4 of the way to the crust to create a sandwich hinge. Spread some mayonnaise onto the bread and place a leaf lettuce onto the bottom half of the bread. Put half the salad into the bread to form a sandwich.
Serving suggestion: Serve this sandwich with potato chips or cole slaw or a mixed green salad. Garnish with a lemon wedge and a dill or sour pickle. Makes 2 servings. Printable Version Go Back to Recipe List | ||
