Crab Ceviche Tostados

INGREDIENTS
8 oz. Crab Classic, Flake Style
1/4 cup red onion, chopped fine
1 clove garlic, minced
2 tbsp. flat leaf parsley, chopped
3 tbsp. lime juice
salt & pepper to taste
1/2 cup kernel corn, canned or fresh
1 cup iceberg lettuce, shredded

Tostados
4 each, 6 inch corn tortillas
3/4 cup refried beans
salsa
2 each scallions, sliced fine
3 tbsp. cheddar or Monterey Jack cheese, shredded

DIRECTIONS
Combine the ceviche ingredients in a medium bowl and marinate for 15 minutes. Preheat oven to 400°F, spray the tortillas with vegetable spray, and place them on a baking sheet in the oven for 8 minutes to crisp. Spread each tortilla with equal amounts of refried beans, top with salsa, scallions, ceviche and cheese.

Serving suggestion: Tostadas go very well with salsa and sour cream.

Makes 4 servings.
