Smoked Salmon Pasta Salad Serves 6

Trans-Ocean Products
3 cups uncooked farfalle (bow tie pasta)
4 oz cold or hot smoked salmon, thin strips
  or chunks
2 cups cherry or grape tomatoes, halved
8 oz blanched asparagus or zucchini, cooled and
  cut into 1-2" pieces
1/4 cup olive oil
2 tbsp lemon juice
1/4 cup fresh dill, chopped
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp crushed red pepper flakes (optional)

Cook pasta according to package directions. Drain and rinse ith cold water. Thoroughly drain. Combine pasta, smoked salmon, tomatoes, and asparagus or zuccchini in a large bowl. In a separate small bowl, whisk olive oil, lemon juice, dill and seasonings. Drizzle over pasta mixture and toss gently to coat. Crumbled bleu cheese or parmesan cheese can be sprinkled on the top prior to serving.
