Egg Salad with Smoked Salmon Serves 4

Trans-Ocean Products
6 oz Cold Smoked Salmon, diced (approx 1 cup)
6 hard-boiled egged, finely chopped
6 tbsp olive oil
2/3 cup red onion, finely diced
1/3 cup capers, drained
2 tbsp fresh dill, minced
1 tbsp lemon juice
Salt and pepper to taste

Toss all ingredients together gently, but well. Serve over a bed of lettuce or on toasted sandwich bread.
