INGREDIENTS
8 oz. Lobster Classic, Chunk Style
1/4 cup diced red onion
1/4 cup refried beans
1/3 cup reduced fat cheddar cheese
1/4 cup diced tomato
1/4 cup jalepeño, optional
1/4 cup light sour cream
1/2 cup iceberg lettuce, shredded
1/4 cup scallion, chopped
2 tbsp. light spicy ranch dressing
2 tbsp. salsa
flour tortilla

DIRECTIONS
Spread the refried beans on the bottom of the tortilla skin. Do the same with the sour cream spreading this evenly over the bean spread. In a bowl, mix the lobster, diced tomato, scallion, jalepeños, red onion and salsa together and place equal portions of this mixture into the center of the tortilla, spread this 3/4 across the base of the tortilla. Top this with the cheddar cheese then top this all with the ranch dressing and wrap by folding in the sides of the tortilla skin and roll from end to end. Cut the wrap in half by cutting it on the bias.

Serving suggestion: Serve this wrap with a salsa dip and sour cream. A crisp salad or fresh fruit is good with this as well.
