Crab & Cottage Cheese Omelet

INGREDIENTS
8 oz. Crab Classic, Flake Style
2/3 cup spinach, fresh, stems removed
2 tbsp. red pepper, small dice
2 tsp. red onion, small dice
8 oz. cottage cheese
2 tsp. chives, dry
8 ea. eggs, large
1/4 cup milk, whole
garlic, granulated to taste
salt & pepper to taste
2 tbsp. butter

DIRECTIONS
In a medium mixing bowl combine crab, spinach, red pepper and red onion and separate this mixture into 4 equal portions. In a small mixing bowl combine cottage cheese and chives, blend well and set aside. In another small mixing bowl beat eggs and milk together. Season with garlic, salt and pepper to taste and mix well. In a small saute pan, heat and melt the butter as needed for each omelet. Add 1/4 of the crab mixture to the pan and sauté until the spinach begins to wilt. Add 1/4 of the egg mixture to the pan and stir and cook the mixture until eggs are done. Add 1/4 of cottage cheese mixture to the center of the omelet. On a hot plate, slide the omelet out and fold in half. Repeat these steps for the remaining omelets.

Serving suggestion: Garnish with a sprig of parsley and steamed asparagus.

Makes 4 servings.
